A passion
for cooking has run in the family for generations
and so from the age of 12 James’ passion was
fuelled by the influences of his mother and grandmother.
After a period of formal cookery education James landed
his fist job in the kitchen of a local hotel, the
Cwrt Bleddyn but was soon enticed further afield.
"Further afield" turned out to be central
Scotland where he spent 5 years at a well renowned
3 rosette’d country hotel.
To be closer to his family James moved back to South
Wales in 2000 when he started at The Crown as Sous
Chef. In 2003 he was promoted to Head Chef and soon
began to develop his own style of cooking.
Now in his fourth year as Head Chef James’ cooking
has a distinctive style and confidence and The Crown
in his competent hands continues to go from strength
to strength, a strength and passion which has most
recently resulted in a coveted Michelin Star, one
of only two in the whole of Wales.
